1 pound of ground beef
1 pound of sausage
3/4 cup shredded or sliced carrots
3/4 cup of chopped onion
3/4 cup of celery
1 teaspoon dried basil
1 teaspoon parsley
4 tablespoon butter
3 cups of chicken broth (1 large can)
4 cups of diced potatoes
1/4 cup of flour
2 cups of velveeta
2 cups of milk
3/4 teaspoons of salt
pepper to taste
1/4 cup of sour cream
method:
Cook the potatoes and carrots till tender.
In a skillet cook the ground beef and sausage till no longer pink. Drain.
In same skittle sauté onions, celery, basil and parsley in 1 tablespoon of butter.
In a large soup pan add broth, potatoes and meat and bring to a boil. Reduce heat and cover and simmer 10-12 minutes.
In the skillet melt remaining butter, add flour and cook and stir until bubbly, three to fine minutes.
Add to soup, bring to boil and cook and stir 2 minutes. Reduce heat, add cheese, milk, salt and pepper and cook and stir until cheese melts.
Remove from heat, and blend in sour cream.
