Cheesy Hominy Casserole


4 (15-ounce) cans hominy, drained
2 (3-ounce) cans green chiles, chopped, drained
3 (8-ounce) cartons sour cream
2 cups (8-ounces) Monterey Jack cheese, shredded
1/4 cup plus 2 tablespoons onion, minced
1 jalapeno pepper, seeded, finely chopped
1/4 cup dry breadcrumbs, fine
1/4 cup butter
Whole green chiles, sliced crosswise
Pimiento strips

Combine first 6 ingredients in a large mixing bowl; spoon into a lightly greased 13x9x2-inch baking dish. Sprinkle with breadcrumbs; dot with butter. Bake, uncovered , at 350 for 30 minutes. Garnish with green chiles and pimiento strips

Yield 12 servings.
