CHERRY NUT BISCOTTI

Ingredients:

2 eggs
5 C. all-purpose flour
1 C. raisins
1 C. vegetable oil
1 C. nuts
2 C. granulated sugar
1 tsp. baking powder
1 tsp. vanilla extract
1 tsp. cinnamon
1 C. chopped candied cherries
1/2 C. orange juice

Beat eggs. Add remaining ingredients and mix well. Divide dough into 4
pieces. Make bars by rolling dough into a long log. Place 2 logs to a
cookie sheet. Grease cookie sheet and place logs on sheet. Brush tops
with mixture of egg yolk and water. Bake at 350ºF for 25 minutes.

Reduce oven temperature to 300ºF. Cut logs into 1/2-inch slices. Return
to baking sheet and cook until toasted, about 20 to 30 minutes.
