I got this recipe while watching Racheal Ray and I made it and its delish ! So I thought you all might like to try it
Ingredients:
2 tablespoons extra-virgin olive oil (EVOO), 2 turns of the pan
4 ribs celery from the heart, chopped
2 medium onions, chopped
1 1/2 cups store-bought shredded carrots, (3 generous handfuls)
1 fresh bay leaf
Salt and pepper
6 cups chicken stock
1 pound ground chicken
2 cloves garlic, finely chopped
A little freshly grated nutmeg
1 egg
1/2 cup Italian bread crumbs (a couple of handfuls)
1/2 cup grated Parmigiano Reggiano cheese (a couple of handfuls)
1 package gnocchi, available in market refrigerated aisle with fresh pastas
1 cup frozen peas
A handful of flat-leaf parsley, finely chopped
Crusty bread for mopping
Directions:
Heat a soup pot over medium to medium-high heat with EVOO. Add celery, onions, carrots and bay leaf, season with salt and pepper, and cook 5 minutes. Add stock to the pot, cover and bring to a boil.
Place chicken in a bowl and season with salt and pepper. Add garlic, nutmeg, egg, bread crumbs and cheese.
Combine the chicken mixture with your hands then roll into walnut-sized meat balls and add to the soup. Wash up, then add the gnocchi to the pot and cook for 5 minutes.
Add peas and parsley, and cook 2 minutes more. Turn heat off under the stoup and allow it to cool for 5 minutes on the stovetop before serving with crusty bread.
Oh man thank you so much for sending me a copy of the Chicken and Dumplings recipe. This dish brings back so many memories of going to my grandmothers place and eating this many times and loving each and every bite I had.
I would make this-sounds really good-however, I would use diced or shredded chix breast. How on earth you got past the ground chix is beyond me! I have bought one “tube” (like ground sausage comes in), for chix chow mein, and got sooooo grossed out at the slimey texture and all that ground gristle that I almost threw up trying to cook it off!! Maybe just the brand that I bought, but I was expecting the consistency of ground beef for some reason…I will never again buy ground chix! Blech!
Gnocchi is a kind of pasta that is Italian. I have had it in my inlaws houses and I know it is made by hand but I have no idea how. It is very small and cooks quickly as it is not dried. Dollytoo
I couldn’t find ground chicken so I ground chicken breast in my food processor. I added the rest of the ingredients for the meatballs after the meat was ground. They turned out great. I took the soup to work and everyone loved it.
i make this soup all the time and have varied the ingredients and spices a bit. i’ve used ground beef, pork, turkey and sausages. instead of buying shredded carrots, i just shred my own or slice some baby carrots.
