Chicken Cacciatora

4 Tbsp olive oil
4 chicken breast halves
2 medium onions, sliced in rounds
2 green bell peppers, thinly sliced
3 cloves garlic, diced
1 (7-oz) can sliced mushrooms
1 cup tomato puree
1 (28-oz) can diced or whole tomatoes with juice
1/2 cup red wine
1 tsp Italian seasoning
Salt, to taste
Pepper, to taste
Spaghetti or linguine, for serving (optional)
Freshly grated cheese, for garnish (optional)


Heat the oil in a large skillet; brown the chicken. Drain. In a slow cooker,

stir together the onions, green peppers, garlic, mushrooms, tomato puree,

tomatoes, red wine, Italian seasoning, salt and pepper. Place chicken on top.

Cover, and cook on medium setting for 8 to 9 hours. Serve over spaghetti or

linguine; top with freshly grated cheese.
