Marinade
1/4 cup soy sauce
1 can (14 oz) coconut milk
1/4 cup chopped fresh cilantro
Combine all ingredients in a large plastic baggies with 2 pounds of chicken tenders. Marinate overnight. Meanwhile soak 30 8 inch wooden skewers in water overnight.
Sauce
1/2 cup sweet n sour sauce
1 jar (12 oz) peanut butter
1 cup water
2 Tblsp soy sauce
1/2 cup dark corn syrup
1 Tblsp crushed red pepper
Mix all sauce ingredients together in med size bowl.Thread chicken on skewers; discard marinade. Grill chicken about 5 minutes per side or until no longer pink.
Makes 8 servings ( 3 skewers each).
