My family loves when I make Chicken & Mushrooms
8 Thin sliced Chicken Cutlets
8 oz Sliced Mushooms
Southwest or Cajuan rub [I make my own]
1 T. peanut oil
4 T. unsalted butter
1/4 c. white wine
Heat a large frying pan and add 2 T. of the butter and the oil. While it’s heating up sprinkle the cutlets with the rub [I do one side place cutlets in the pan sprinkled side down and then sprinkle the other side]. Cook cutlets about 3 mins then turn. Cook another 3 mins. Remove to a warm plate. Add mushrooms and cook for about 5 mins. Put cutlets back in the pan and add the remaining butter and the wine. Swirl the pan back and forth combining the butter and wine. Let it cook for about 2-3 mins. Cover and turn off the heat and leave it alone for 5 mins. I serve it with rice and beans or mashed potatoes. Or you can make great sandwiches with lettuce and tomato and roasted peppers! Yum!!
