For those that want/need a fast dish when they come home from work. Enjoy :smiley:

1 1/2 pounds boneless, skinless chicken breast, cut into 3-inch strips
2 Tablespoons olive oil
1 teaspoon lemon-pepper seasoning
1 package (16 oz.) frozen California-blend vegetables
1 can (14 1/2 oz.) diced tomatoes, undrained
1/2 cup chopped onion
1 teaspoon dried basil
1/2 teaspoon onion powder
1 package (16 oz.) angel hair pasta
Shredded Parmesan cheese

In a large skillet, saute the chicken in oil until lightly browned; sprinkle with the lemon-pepper. Add the frozen vegetables, tomatoes, onion, basil, and onion powder. Bring to a boil. Reduce hear; cover and simmer for 6-8 minutes or until chicken juices run clear and vegetables are tender.

Meanwhile, cool pasta according to package directions; drain. Top with chicken mixture. Serve with Parmesan cheese if desired.
