Chicken-Spinach Casserole

10 oz. pkg. chopped spinach
1 can cream of celery or mushroom soup, divided in half
1 cup water
1/4 cup butter
6 oz. pkg. Stove Top Stuffing Mix for chicken
2 cups chicken, cooked and diced
1/3 cup skim milk
2 TB parmesan cheese

Preheat oven to 400 degrees. In a sauce pan mix spinach, half of soup, water, butter and contents of the seasoning packet from stuffing mix. Bring to a boil separating spinach with a fork. Reduce heat, cover and simmer 5 minutes. Add stuffing crumbs, stir just to moisten, spoon into a 9 x 9-inch baking dish, arrange chicken on stuffing. Stir milk with remaining soup, pour over chicken. Sprinkle with cheese. Bake 15 minutes or until hot.
