This creamy dish goes well with rice or noodles. Quick stove-top chicken.
1 tbsp cooking oil
2 boneless, skinless chicken breast halves, cut in cubes or strips
1/3 cup choppend onion
1 cup sliced fresh mushrooms
2 tsp flour
1/4 tsp salt, generous measure
1/16 tsp pepper
1/16 tsp thyme
1/8 tsp paprika
1/2 cup water
1/2 cup low-fat sour cream, or regular
2-3 tsp sherry (or alcohol-free sherry), optional
Heat cooking oil in frying pan. Add chicken and onion. Stir-fry for about 5 minutes to brown and cook.
Add mushrooms. Stir-fry for 2 minutes more.
Mix in flour, salt, pepper, thyme and paprika. Stir in water and sour cream until mixture boils and thickens slightly.
Stir in sherry. Serves 2.
