Chicken Taco Soup

I made this the other night and it was wonderful, I have been eating it for lunch the past 2 days it was so good!! LOL

Chicken Taco Soup

2 boneless skinless chicken breasts
2 cups chicken broth, or 2 cups water and 2 boullion cubes
1 onion, finely chopped (I usually saute in butter because my family likes to have it cooked until soft)
2 cans pinto beans
1 can chopped green chilies
1 can diced stewed tomatoes
2 can whole kernal corn
1 pkg taco seasoning mix
1 pkg Ranch dressing mix
2 cups instant rice
shredded cheese and sour cream to garnish!

Boil the chicken in the broth, remove chicken and allow to cool then shred using two forks.
All the remaining ingredients except cheese and sour cream. Do not drain any cans. Add the chicken back to the soup and simmer until the rice is tender. You may want to add more broth or water if you want it to be a “soupier” soup. (is that even a word? “soupier”) Serve with cheese and sour cream. Also serve with tortilla chips or cornbread.
