This is one of my family’s favorite meals of all time…even though it’s healthy!
Slow Cooker Chicken Tortilla Soup
Ingredients:
1 lb bonesless all natural chicken breasts
5 cups organic chicken broth
1 cup water
1 can black beans
1 cup frozen corn
1 medium onion, chopped
3 cloves garlic
1 can fire roasted diced tomatoes
2 tablespoons chili powder
1 tablespoon cilantro
1 teaspoon cumin
1 teaspoon salt
Directions:
Put everything in the crockpot and cook on low 6-8 hours. Garnish with sliced avocado, cheese, and a scoop of Greek yogurt. (I really feel like I should write some additional directions but that’s really all there is to it!)
Total cost for this meal was about $10 and fed 4 very generous servings plus plenty of leftovers for my lunch tomorrow. Leaving the chicken out would cut the cost in half, at least. Eating real food is delicious and super easy!
