Chicken with Israeli Couscous - CP

Chicken with Israeli Couscous

2 Tbs butter
1 tsp minced garlic
1 1/2 c fat free reduced sodium chicken broth
2 Tbs white wine
3/4 tsp black pepper
3/4 tsp kosher salt
1/3 c Israeli couscous
1/2 medium onion, finely chopped
2 celery stalks,finely chopped
2 large carrots, peeled and finely chopped
5 IQF 3 oz chicken breasts
1 Tbs fresh parsley, chopped for garnish

Season chicken breasts with salt and pepper. Add all ingredients to the slow cooker except for seasoned chicken breasts and mix well to combine. Place chicken on top of the mixture.
Cover and cook on low for 6 hours. To serve, transfer chicken to individual bowls. Mix the couscous and vegetables well, then spoon into the bowls alongside the chicken. Sprinkle with fresh parsley if desired.
