Chili Bean Con Carne
1 tablespoon olive oil
1 small onion, finely chopped
1 garlic clove, crushed
8 ounces ground beef
1 tablespoon tomato paste
1 large red chili, chopped
1/2 teaspoon hot chili powder
1 teaspoon dried mixed herbs
1 (7-ounce) can chopped tomatoes
1 (7 1/2-ounce) can baked beans
Black pepper to taste
Optional toppings: sour cream, shredded cheddar cheese, jalapeno peppers
Heat oil in a large pan, add onion and garlic and cook over medium heat for 5 minutes or until softened. Increase heat to high and add ground beef. Fry, stirring, until browned all over.
Stir in tomato paste, chili, chili powder and mixed herbs; continue to cook for 5 minutes. Add remaining ingredients, bring to a boil, cover and simmer for 30 minutes.
Transfer chili to serving bowl, garnish with toppings and serve.
