Chilly chicken with raisins

Ingredients:

400g chicken - cut into bite sizes
4 red chillies - sliced into medium size pieces
1 inch ginger - sliced thinly
5 garlic - sliced thinly
1 tbsp lemon juice
1 tbsp dark soy sauce
50g raisins
1 stalk coriander leaf - sliced thinly
spring onions for garnishing
4 tbsp oil
salt as per taste

Preparation:

When oil is heated, add in chillies, ginger and garlic.
Saute for about 2-3mins, then add the chicken pieces.
Stir the chicken in and pour some water (about 1/4 cup) to allow the chicken to cook.
Once the water evaporates, add lemon juice, soy sauce, raisin and salt.
Stir to combine all the ingredients together. Continue to do so until the the outer layer of chicken pieces becomes crispy.
Off the heat, add coriander leaves and another good stir.
Garnish with spring onions before serving.
