Chocolate Chip Banana Muffins
I adapted and added to the banana bread recipe in the Zojirushi Virtuoso bread machine cookbook to create this recipe.
This recipe makes moist and tender chocolate chip banana muffins. The the cinnamon and chocolate chips go really well with banana flavor of these muffins. The yogurt and corn oil give these muffins a moist almost creamy
texture.
Makes about 24 regular muffins, or 48 mini muffins. Also will make one 9x5 inch (23x13 cm) loaf of banana bread.
Ingredients:
1-3/4 cups (225 g) All-Purpose Flour
1/2 cup (65 g) Whole Wheat Flour
1 Tbsp (10 g) Baking Powder
1 tsp (5 g) Baking Soda
1/2 tsp (3 g) Table Salt
1-1/2 tsp (3 g) Ground Cinnamon
2 Large Eggs (100 g), Beaten, or 1/2 cup egg substitute (like Eggbeaters)
3/4 cup (150 g) White Granulated Sugar
1/4 cup (50 g) Brown Sugar, Packed Firmly, Light or Dark
1/3 cup (75 g) Corn Oil
1 cup Mashed Bananas (250 g), about 2 or 3 Bananas, Very Ripe, Peeled and Mashed (dark, over-ripe bananas add the most flavor)
1/2 cup (120 g) Plain or Vanilla Flavored Yogurt (Ok to substitute sour cream, buttermilk, sour milk or just plain milk)
1 1/2 tsp (7 g) Vanilla Extract
1 tsp (5 g) Lemon Juice, (from bottled Ok)
2/3 cup (200 g) Semisweet Chocolate Chips
Preheat the oven to 350°F (175°C), muffins should be baked on oven rack positioned in the middle. Coat muffin pans with non-stick spray, or use paper liners.
In a mixing bowl, stir together the Flours, Baking Powder, Baking Soda, Table Salt and Ground Cinnamon. Mix dry ingredients well. Set aside until needed.
In another mixing bowl, beat together the Eggs and Sugars until smooth and well mixed. Add Corn Oil to Eggs and Sugars, mixing well. Then mix in Mashed Bananas, Yogurt, Vanilla Extract, and Lemon Juice. Mix a minute or two.
Stir in the reserved Flour mixture and the Chocolate Chips. Mix gently but thoroughly.
Pour batter into prepared muffin cups.
Bake in preheated oven on the middle rack. Bake mini muffins for 10 to 15 minutes, and regular muffins for 25 to 30 minutes.
If making a 9x5 inch loaf of banana bread, bake for 60 to 65 minutes.
You can test for doneness with an instant read digital thermometer, it should read at least 190°F (88°C) in the center of the a muffin (or loaf) to be done, over 205°F (96°C) and they may be dry. Or you can test by the old fashioned method, a toothpick should come out clean when poked in the center of a muffin.
Cool muffins before trying to remove paper wrappers or removing banana bread from a loaf pan.
