Chocolate Mousse

1/4 c. sugar
4 tbs. rum
4 oz. semi-sweet chocolate
3 tbs. heavy cream
2 eggs, beaten stiff
1 c. heavy cream, whipped

Cook sugar and rum over low heat until sugar dissolves. Set aside. Melt chocolate in a heavy saucepan. Stir in 3 tbs. heavy cream. Add the rum syrup to the chocolate blending well. Cool. Fold the beaten egg whites and the chocolate mixture into the whipped cream. Pour the mousse into individual dessert cups. Chill. Can be garnished with whipped cream and shaved chocolate.
