Chunky Chicken Chili
Makes 4 servings
1 can (19-oz.) ready-to-serve chunky minestrone soup
1 can (4-oz.) diced green chili peppers
1/8 tsp. hot pepper sauce or to taste
8 oz. skinless, boneless chicken thighs, cut into 1/2-inch pieces
1/2 cup onion, chopped
1/2 cup green bell pepper, chopped
1 can (8oz.) red kidney beans
Sour cream, snipped fresh cilantro and shredded Monterey Jack cheese, optional

In the bottom dish of the Meals in Minutes™ Family-Size Microsteamer, combine soup, chili peppers and hot pepper sauce. In the colander insert of the Microsteamer, combine chicken, onion, and bell pepper. Place colander insert in bottom dish.

Pour beans with their liquid over chicken mixture, allowing liquid to drain through to the soup. Stir beans into the chicken mixture. Cover and microwave on High 9-11 minutes, stirring once, until chicken is tender and no longer pink.

To serve, stir chicken mixture into soup mixture and ladle into bowls. Top, if desired, with sour cream, cilantro and cheese. Serve with corn muffins.
