Chunky Chicken Parmesan Salad
Prep: 15 min., Chill: 2 hrs.
4 cups chopped cooked chicken breast
1/3 cup light mayonnaise
1/4 cup freshly shredded Parmesan cheese
2 green onions, chopped
2 celery ribs, chopped
2 tablespoons chopped pecans, toasted
1/4 teaspoon pepper
1/8 teaspoon salt
Garnish: celery leaves
Stir together first 8 ingredients in a large bowl. Cover and chill 2 hours. Garnish, if desired.
Note: For testing purposes only, we used BelGioioso Freshly Shredded Parmesan Cheese.
Yield: Makes 10 servings (serving size: 1/2 cup)
