Chunky Chicken Peanut Wrap

A good wrap is great to go!

Here’s a delicious recipe for leftover chicken that will taste as good—or better than any wrap you can buy at the deli.

Prep Time: 5 minutes
Total Time: 10 minutes

INGREDIENTS
2 Tbsp chunky peanut butter
1 tsp lite soy sauce
1 Tbsp water
1 8-oz. grilled or baked chicken breast
2 flour tortillas or your favorite sandwich wrap
5 oz. shredded iceberg lettuce
1 large carrot, peeled and shredded

DIRECTIONS
Place the peanut butter, lite soy sauce, and water in a bowl. Whisk together until evenly combined. Set aside. Slice the cooked chicken breast into chunky slices and place half the amount of chicken on each tortilla. Divide the carrots and lettuce equally and place on top of the chicken in each tortilla.
Drizzle the peanut sauce over the fillers. Then roll up the sandwich and wrap with Saran™ Cling Plus® Wrap.

Makes 2 wraps

Prep notes:
~Prepare the peanut sauce the night before and you’ve cut your assembly time in half.
~Use only half the prescribed peanut sauce and you’ll reduce the calorie load significantly. (WARNING ! … this sauce is so finger-licking good, it may be difficult to resist !)

P.S…if there’s kids around…best plan on at LEAST doulbleing the ingredients if not trippleing them…kids have “bottomless pits” when it comes to things “good to eat”…Seemingly; the bigger they get the more the term “eat” becomes “gobble”.
