Chunky potato pancakes with sausage

Ingredients:

1 C baking mix
1/2 C milk
1 tsp. salt
4 large eggs
3 C frozen hash browns
1 small onion, chopped
Applesauce and/or sour cream

Directions:

Brown sausage meat and set aside

Beat baking mix, milk, salt and eggs together with wire whisk until smooth. Stir in frozen hash browns and onion. Pour batter onto preheated griddle or skillet and cook until pancakes are dry around edges. Turn and cook until golden. Serve with sausage and applesauce or sour cream. Excellent wake-me-up for breakfast, served with lots of good, hot coffee!

Do you defrost the hash browns? Do you break up the hash browns? The recipe sunds delicious. I’m just not sure if the hash browns available here are the same as where you are if that makes any sense.

Tried it liked it would be better with green peppers

Maybe some Jalapenos? My sister makes something very close to this and swears it’s the best breakfast this side of the Mississippi. I have yet to try it; one day… one day.
