Chutney Rice

1 cup chopped sweet onion
1 cup sliced celery
4 Tablespoons butter
3 cups cooked rice
1/2 cup flaked coconut
1/4 cup mango chutney
1/2 teaspoon ground ginger
1 teaspoon curry powder

Sauté onion and celery in butter: Add remaining ingredients and toss with a fork over low heat.

Serves 6-8
