Cilantro pesto mac and cheese

Ingredients:

Macaroni-2 cup cooked
All purpose flour-3 tblspn
Milk-3 cup
Cilantro Pesto-1 cup(Click this for recipe)
Cheddar Cheese-2 cup
Olive oil-2 tblspn
Salt to taste
Pepper to taste

For Topping:
Cilantro Pesto-1 tblspn
Cheese-2 tblspn
Breadcrumbs- ½ cup

Preparation:

Preheat the oven to 180°C(360°F)…

Heat oil in a kadai and add in the flour…Cook for 1-2 mins…

Slowly add the milk and mix well till it gets smooth sauce…Add in the pesto and cook for 3-4 mins.

Add in the cheese and switch off the flame…Season with some salt and pepper…

Throw in the cooked macaroni and mix well…

Make the topping by mixing some pesto with breadcrumbs and cheese and set aside…

Tip the macaroni in a baking pan and top it with the mixture…

Bake it for 35-40 min until bubbly.

Serve hot with any vegetables…
