Ingredients:

  • 1 cup of almonds
  • 1 cup of pecans
  • 1/2 cup of sunflower seeds
  • 1/2 cup of pumpkin seeds
  • 1/2 cup of shredded unsweetened coconut
  • 1/4 cup of coconut oil
  • 2 tbsp of honey (or a sugar-free sweetener like erythritol or stevia)
  • 1 tsp of vanilla extract
  • 1/2 tsp of cinnamon
  • 1/4 tsp of salt

Instructions:

  1. Preheat the oven to 325°F.

  2. In a large mixing bowl, combine the almonds, pecans, sunflower seeds, pumpkin seeds, and shredded coconut.

  3. In a small saucepan, melt the coconut oil and honey (or sugar-free sweetener) over low heat. Add the vanilla extract, cinnamon, and salt, and stir until combined.

  4. Pour the liquid mixture over the nut mixture and stir until the nuts are coated.

  5. Spread the mixture evenly on a lined baking sheet and bake for 15-20 minutes, or until golden brown.
