Cinnamon Logs Cookie

The cinnamon logs cookie recipe is simple with a great taste. A shortbread-like cookie with cinnamon flavor added to both the cookie and the glaze.

1 1/2 sticks (3/4 cup) salted butter, softened
1/3 cup powdered sugar
1 tablespoon milk
1 1/4 cups all-purpose flour
1/2 cup cornstarch
1 teaspoon ground cinnamon

Glaze:
1 cup powdered sugar
2 tablespoons salted butter, softened
1/2 teaspoon vanilla extract
milk
ground cinnamon

In a large bowl, combine butter, powdered sugar, and milk and beat with an electric mixer set on medium speed until creamy. Add flour, cornstarch, and ground cinnamon and continue to beat on low speed until well mixed. Cover with plastic wrap and refrigerate 30 minutes.

Preheat oven to 375 degrees F.

Divide dough into thirds. Roll each third into a 20-inch rope. Cut each rope into 10 pieces. Place 2 inches apart on ungreased cookie sheets.

Bake for 11-13 minutes or until lightly brown around edges. Transfer cookies to cooling surface.

Glaze:

In a medium bowl, beat together powdered sugar, butter, vanilla extract, and enough milk to form a smooth glaze. When cookies are completely cool, drizzle each cookie with glaze and lightly sprinkle with ground cinnamon.

Makes 30 cookies.
