Cinnamon Swirl

1/2 cup shortening
1 cup sugar
2 tablespoons cornstarch
2 tablespoons vinegar
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup water
2 cups white flour
FILLING and TOPPING:
1 tablespoon cinnamon
2 tablespoons sugar

  1. Cream together shortening and sugar. Add the rest of the ingredients in order and mix till well combined. Combine sugar and cinnamon and mix.

  2. Grease and flour a loaf tin. Divide batter into thirds. Layer one third of the batter in the bottom of the loaf pan. Sprinkle with cinnamon/sugar mixture. Layer with another third of the batter and sprinkle with cinnamon/sugar. Spread out last part of the batter. Slice through the batter at various points with a knife to create the marbled effect. Sprinkle with remaining cinnamon/sugar.

  3. Bake at 350F for 1 hour or until the loaf tests done.
