1/2 cup shortening
1 cup sugar
2 tablespoons cornstarch
2 tablespoons vinegar
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup water
2 cups white flour
FILLING and TOPPING:
1 tablespoon cinnamon
2 tablespoons sugar

Cream together shortening and sugar. Add the rest of the ingredients in order and mix till well combined. Combine sugar and cinnamon and mix.

Grease and flour a loaf tin. Divide batter into thirds. Layer one third of the batter in the bottom of the loaf pan. Sprinkle with cinnamon/sugar mixture. Layer with another third of the batter and sprinkle with cinnamon/sugar. Spread out last part of the batter. Slice through the batter at various points with a knife to create the marbled effect. Sprinkle with remaining cinnamon/sugar.

Bake at 350F for 1 hour or until the loaf tests done.
