Note: I live in California and even though our temps have dropped and gotten much cooler we can still buy great avocados in our grocery stores. These are great, give them a try if you like all the ingredients that are stuffed in these avocados. A little expensive to make with the crab and all, but so delightful to eat. I have never cut this recipe back but I’m sure you could, just make it to taste. I have only made it when I have had my lady friends over for lunch and all of them have loved them.
1/2 cup finely diced red bell pepper
1/2 cup finely diced green bell pepper ( I actualy use yellow ones)
1/2 cup ( chopped small) red onion
1/2 cup finely diced celery
1/2 cup peeled and shredded carrot, optional
1/4 cup fresh lime juice
2 teaspoons ground cumin
1/4 cup finely chopped fresh cilantro (can use less )
1 cup mayonnaise
1 (51 0z.) can of chopped clams, drained well
1 pound jumbo lump crabmeat, drained well
6 ripe avocados, pitted and halved
