Cocktail Pancakes (Makes 24 small pancakes) These can be made ahead then heated to serve.
Ham Filling:
2 T mayonnaise 2 t horseradish
2 T cream cheese 2 c finely chopped ham
Mix ingredients together and set aside. Makes filling for 28 pancakes.
Batter:
1 c pancake mix 1 egg, beaten
¼ c cornmeal 1 T melted butter
1½ c milk
Combine pancake mix with cornmeal. Stir in milk; beat in egg and butter. Pour 1 tablespoon of batter for each pancake into a hot, lightly greased griddle. Bake 2 - 3 minutes on each side or until golden brown, turning once. Spoon a little filling on each pancake while still warm; roll and fasten with a wooden toothpick. Heat under a broiler 2 minutes or sauté lightly in a little butter. Serve hot.
