2 cups unbleached flour (or whole wheat pastry flour but use more water!)
2 tsps aluminum-free baking powder
vegan chocolate chips - put in as many as you like
½ c. cocoa powder
1½ cups vegan sugar
1/2 cup canola oil
1 teaspoon vanilla
1/2 cup water (more or less)
Preheat oven to 350.
In a large bowl mix flour, cocoa, baking powder and salt. Add chips. Make a well in the center and set aside.
In a medium size bowl mix sugar and oil well, then add the vanilla and water. Add the wet to the well in the dry and mix well. Add more chips if you need to. Spoon onto ungreased cookie sheets. These cookies do NOT spread, so make them the size you want them to be. Bake.
In my oven they take 11 minutes.
they will harden more while they cool so pull them out still a bit soft.
