Coney Island Spuds
3 large baking potatoes
3/4 pound ground beef
1 15-ounce can of sloppy joe sauce
1 8-ounce container sour cream dip with chives
Scrub potatoes with a brush and prick skin with a fork. Bake in a 425 degree oven for 40 to 60 minutes or until tender.
Brown beef in a skillet and drain. Stir in sloppy joe sauce. Bring to a boil and reduce heat. Cover and simmer 5 minutes. Stir in half of the sour cream dip and 1/4 cup of water. Heat thoroughly. Do not boil. Quarter potatoes lengthwise. Spoon meat mixture over potatoes. Top with remaining dip.
