Confetti Rice

1 lb. sliced bacon, diced
2 c long grain rice, cooked
2 c diced carrots, parboiled
2 c diced celery, parboiled
1 c fresh or frozen peas
Soy Sacuce, optional

In a large skillet, cook bacon until crisp. remove to paper towels; drain all but 1/3 cup of the drippings. Add rice, carrots, celery and peas to the dripping; cook until heated through, about 5-7 minutes. Stir in bacon. Serve with soy sauce if desired.
