Consumer Reports Macaroni and Cheese
Makes 2 1-cup servings.
2 cups water
1/4 teaspoon salt
1 cup elbow macaroni
1 cup sharp cheddar cheese, grated
2 Tablespoons heavy cream
2 Tablespoons margarine
pinch of paprika
pinch of white pepper
pinch of cayenne pepper
In a 2-quart saucepan, bring the salted water to a boil.
Stir in the macaroni and return the water to a boil.
Keep it boiling for 4-minutes, then lower the heat to medium.
Let the water boil for another 7-minutes, stirring the macaroni frequently. You might have to lower the heat to the lowest setting
for the last 2-minutes to prevent sticking. Add the rest of the ingredients and stir well until the cheese is melted.
This recipe takes only 20 minutes and is convenient because you only use one pan. You don’t have to drain the macaroni.
