Consumer Reports Nearly Perfect Pancakes

Makes 18 4-inch pancakes.

2 eggs
2 Tablespoons butter or margarine, melted
2 cups buttermilk
2 cups flour
2 teaspoons baking powder
4 teaspoons sugar
1/2 teaspoon salt

Preheat the griddle to 400-degrees F while mixing the ingredients.

Grease the pan very lightly with vegetable oil, margarine or butter–unless the pan has a non-stick coating.

Beat the eggs, shortening and milk in a large bowl until well-blended.

Then, add the remaining ingredients and mix until you have a slightly lumpy batter.

Spoon or ladle the batter onto the griddle.

Turn the pancakes when the edges look dry and bubbles cover the top.

This recipe makes 18 4-inch pancakes, but you can cut it in half.

For the most tender pancakes, use cake flour instead of all-purpose flour.
