Copycat Pop-Tarts

Pastry:
3 1/2 C. whole wheat flour
1 tsp. sea salt
3/4 C. melted butter
1 C. plain yogurt
organic jam, jelly, apples, mashed up strawberries

Glaze:
1/2 C. organic powdered sugar
2 Tbs. water or milk

Mix first 4 ingredients to make dough. Place dough on floured surface and roll.

Cut dough into two rectangles of same size.

Add 1 tsp. jam or filling to middle of one side of pastry, and place equal-sized rectangles on top of each other.

Press fork along the edge of the pastry to add a decorative seam.

Place pastry on non-greased cookie sheet.

For 20-25 minutes, bake in preheated oven at 350 degrees until edges become golden brown.

To prepare glaze, place organic powdered sugar in a bowl and stir 2 Tbs. water or milk 1 Tbs. at a time until it will drizzle easily onto pastry.

Cool pastry and spread glaze.

Serves 2-3

I loved pop tarts as a kid. I never thought of making homemade ones. That’s pretty awesome. I’m gonna have to give it a try, the kids will love it.

This much dough yields TWO hand held pastries??!!!
