Cornmeal Crumbed Drumsticks
1 Cup Sour Cream
3 Tbsp Fresh Lemon Juice
3 Cloves Garlic, Minced
24 Drumsticks, Skins Removed
Salt & Pepper To Taste
Crumb Coating:
¾ Cup Cornmeal
¾ Cup Plain Dry Breadcrumbs
¾ Cup Freshly Grated Parmesan Cheese
2 Tbsp Minced Fresh Parsley
1 Tbsp Dried Basil
1½ Tsp Dried Thyme
1 Tsp Paprika
1/3 Cup Melted Butter
Combine Sour Cream, Lemon Juice And Garlic In A Large Bowl. Add Drumsticks And Season With Salt And Pepper. Stir To Coat Well. Cover And Let Marinate In The Refrigerator For 2 Hours Or Overnight.
Preheat Oven To 350°f.
Combine All Crumb Coating Ingredients Except Butter In A Large Heavy Plastic Bag. Add A Few Drumsticks At A Time And Shake To Well Coat In Crumb Mixture.
Place On Baking Sheets Lined With Greased Foil Or Parchment Paper (for Easy Cleanup). Brush Drumstick Lightly With Butter (i Would Coat With Butter First Then Toss In Crumbs.
Bake In Oven For 40 – 50 Minutes Or Until Drumsticks Are Golden And No Longer Pink When Cut Into At The Bone.
Serves 8 – 12.
