Cream of Broccoli Soup

Cream of Broccoli Soup

(6 servings)

1 medium onion, sliced
1 medium carrot, sliced
1 small celery stalk with leaves, sliced
1 garlic clove
1/2 cup water
2 cups coarsely shopped cooked broccoli
1 tsp salt
generous pinch of cayenne
1/2 cup cooked macaroni
1 cup chicken stock
1/2 cup cream
sour cream

Put onion, carrot, celery, garlic and water in covered skillet and simmer for 10 minutes.

Transfer to food processor. Add broccoli, salt, cayenne and macaroni and coarsely chop. With motor running, add stock and cream.

Chill and serve topped with sour cream.
