Creamy Asparagus Soup


1/4 cup Butter
1/2 cup Onion, finely minced
1/2 cup Celery, sliced very fine
2 Tbsp. Flour
2-1/2 cups Chicken Broth
2 cups fresh or frozen chopped Asparagus
1 cup Half & Half

Melt butter in 3-quart saucepot. Stir in onion and celery, cook to tender-crisp stage. Stir in flour, cook 1 minute, stirring constantly. Stir in chicken broth and asparagus. Cook 7 minutes or until asparagus is tender, if mixture gets too thick, add some chicken broth. When asparagus is done and soup is thickened to a heavy sauce, remove from heat and cool covered to warm. Place soup in blender and puree until soup is smooth. Return to saucepan and stir in half & half. Cook 8 minutes stirring often. Do not boil, but get good and hot. Serve immediately.

Yield: 5 (1 cup) servings
