Creamy Chicken & Biscuits

This is a comfort food that is so good in the cold winter month,s we have it quiet often and it is a meal in it’s self we may have a green salad with it.

1/2 large onion chopped
1-1/2 tsp. butter
4 cups chopped cooked chicken
1 (103/4 oz.) can cream of chicken soup
1 cup sour cream
1/2 cup milk
1/2 cup chopped pimiento
1 cup shredded sharp cheddar cheese, divided
6 frozen biscuits , unthawed

Preheat oven to 350 degrees. Grease the bottom and sides of an 11X7-in. baking dish. sauté onion in the butter in a small non-stick skillet until tender. Combine onion chicken soup, sour cream, milk and pimiento in a bowl and mix well. Spoon mixture into the baking dish. Bake for 15 minutes. Remove from oven. Sprinkle baked layer with 3/4 cup of the cheddar. Arrange biscuits in a single layer over the top. Sprinkle the remaining cheese. Bake until the biscuits are golden brown and the sauce is bubbly about 20 minutes longer.
