This is one of my favorites!
4 Chicken Breast (pounded down to 1/4 inch)
1 package bacon
1 bottle of Italian Dressing
2 Whole Jalapeno Peppers
1 8oz package cream cheese
Toothpicks, to hold the bacon
Take the jalapeno and cut in half long ways and scrap the seeds out. Then fill the jalapono with a heaping scoop of cream cheese and then freeze.
Marinade to chicken in the Italian dressing for at least an hour.
Lay the chicken breast out and place 1/2 of stuffed jalapeno incenter and roll up. Wrap bacon around chicken, secure w/ toothpick and grill on med heat on the top rack for about 30 minute. The last few minutes moveto bottom rack and let the bacon get crisp.
I usually serve this with spanish rice or dirty rice.
