Creamy Wild Rice Soup

2 tsp. vegetable oil
1 cup minced onion
8 oz. sliced fresh mushrooms
1 can chicken broth
1 can cream of mushroom soup
2 cups water
1/4 cup dry sherry
1 box long grain & wild rice blend
1/4 cup pine nuts

Sauté onion & mushrooms in oil in large kettle. Add broth, soup, water, sherry & rice blend, including seasoning packet. Stir to blend, bring to a boil, cover and reduce heat. Simmer for amount of time designated on rice box. Serve immedately.
