Baked Chicken Chips with Zesty Greek Yogurt Dip
Ingredients:
- 1 lb boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tsp salt
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp black pepper
- Optional dip: Greek yogurt and dill dip (recipe below)
Instructions:
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Slice the chicken breasts into thin, even slices. Try to keep them all the same thickness so that they cook evenly.
- In a small bowl, mix together the olive oil, salt, garlic powder, paprika, and black pepper.
- Brush both sides of each chicken slice with the spice mixture.
- Arrange the chicken slices in a single layer on the prepared baking sheet.
- Bake for 15-20 minutes or until the chicken chips are golden brown and crispy around the edges. Be careful not to overcook them, as they can become dry and tough.
- Remove the chicken chips from the oven and let them cool on the baking sheet for a few minutes before serving.
- Serve with the optional Greek yogurt and dill dip.
Greek Yogurt and Dill Dip Recipe:
- 1 cup plain Greek yogurt
- 2 tbsp fresh dill, chopped
- 1 tbsp lemon juice
- 1/4 tsp garlic powder
- Salt and pepper to taste
Instructions:
- In a small bowl, combine the Greek yogurt, chopped dill, lemon juice, garlic powder, salt, and pepper. Stir well to combine.
- Cover and refrigerate the dip for at least 30 minutes to allow the flavors to meld together.
- Serve alongside the baked chicken chips for a delicious and healthy snack.
