Baked Chicken Chips with Zesty Greek Yogurt Dip

Ingredients:

  • 1 lb boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp black pepper
  • Optional dip: Greek yogurt and dill dip (recipe below)

Instructions:

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Slice the chicken breasts into thin, even slices. Try to keep them all the same thickness so that they cook evenly.
  3. In a small bowl, mix together the olive oil, salt, garlic powder, paprika, and black pepper.
  4. Brush both sides of each chicken slice with the spice mixture.
  5. Arrange the chicken slices in a single layer on the prepared baking sheet.
  6. Bake for 15-20 minutes or until the chicken chips are golden brown and crispy around the edges. Be careful not to overcook them, as they can become dry and tough.
  7. Remove the chicken chips from the oven and let them cool on the baking sheet for a few minutes before serving.
  8. Serve with the optional Greek yogurt and dill dip.

Greek Yogurt and Dill Dip Recipe:

  • 1 cup plain Greek yogurt
  • 2 tbsp fresh dill, chopped
  • 1 tbsp lemon juice
  • 1/4 tsp garlic powder
  • Salt and pepper to taste

Instructions:

  1. In a small bowl, combine the Greek yogurt, chopped dill, lemon juice, garlic powder, salt, and pepper. Stir well to combine.
  2. Cover and refrigerate the dip for at least 30 minutes to allow the flavors to meld together.
  3. Serve alongside the baked chicken chips for a delicious and healthy snack.
