Crunchy Fried Green Tomatoes

1/2 cup matzo meal
1 tsp. kosher salt
1/2 tsp. ground red pepper
1/8 tsp. sugar
4 to 5 large green tomatoes, cut into 1/2 in. thick slices
2 large eggs, slightly beaten
Peanut oil
Kosher salt (optional)

Combine first 4 ingredients in shallow dish. Dip tomatoes into eggs, allowing excess to drip off. Dredge in matzo mixture, pressing it into the surfaces. Place on a wax paper-lined baking sheet. Pour oil to a depth of 1/2 in. into a large, deep cast iron skillet; heat over medium heat to 360*. Fry tomatoes, in batches, 3 to 4 minutes on each side or until golden brown. Drain on paper towels. Sprinkle with additional kosher salt, if desired. Serve immediately.
