I had a friend with a very large garden give me a bunch of vegetables, and this is one of the salads I made with some of them. I give this to my grandson, who is on a very restriced diet for health reasons, he is only 8 and he loves it. Or maybe it is just his grandma he loves and will eat anything I give him.
Cut 4 cucumbers in half lengthwise, then cut into thin slices. Combine cucumber, 2 cups chopped tomatoes (chopped into large chunks) and 1 cup diagonally liced carrots. Combine 2 taqblespoons chopped fresh parsley, 3 tablespoons red wine vinegar, 2 teaspoons extravirgin olive oil, 1/2 teaspoon salt and 1/4 teaspoon pepper, stirring with a whisk. Drizzle over salad and toss well to coat.
This is not too heavy so it is very refreshing.
