Cumin stir-fried potatoes & veges


3 medium (about 400g) potatoes - boiled till soft, remove skin and break into smaller pieces
1 (about 100g) red onion - chopped
2 red chillies - sliced thinly
1 inch ginger - chopped
2 cups frozen vegetables
1 tsp cumin seeds
1 tbsp lemon juice
2 stalks coriander leaves - shredded/sliced
4 tbsp grape seed oil
salt to taste


When oil is heated, fry the onions, ginger and cumin seeds.
As soon as the seeds starts to pop, put in the potatoes.
Keep frying over low heat until the potatoes starts browning around the edges.
Lastly, the rest of the ingredients are added, stirring to combine all together.
Remove from heat once done.
