Date Krispy Bars
1/2 C. butter, softened
1/2 C. brown sugar, firmly packed
1 C. dates, chopped
1/2 C. butter
2 C. Rice Krispie cereal
1 C. flour
1/2 C. white sugar
1 egg, beaten
1 tsp. vanilla
Cream cheese frosting
Beat 1/2 C. butter with mixer for 30 seconds. Add brown sugar; beat until combined. Beat in flour until crumbly. Press mixture into bottom of 11x7 or 9x9 in pan. Bake in preheated 375° oven for 12 to 15 minutes or until golden.
In medium saucepan, combine dates, white sugar, and 1/2 C. butter. Bring to a boil; reduce heat and cook, stirring for 3 minutes or until thick. Remove from heat. Gradually stir 1/4 C. of mixture into beaten egg. Add egg mixture to pan. Cook until bubbly stirring constantly. Remove from heat. Stir in Rice Krispies and vanilla. Spread over cooled crust. Cool completely. Spread a cream cheese frosting over filling and cut into bars.
