Day Before PayDay Lunch

This is a sandwich Mom used to make when the cupboards were darned near bare back in the late 50’s. Hope you enjoy as much as we did.

10 slices white bread
1 large can cream of mushroom soup (don’t dilute)
10 cheese slices
10 rashers of bacon

Place the bread on a baking sheet and toast slightly in the oven.
Remove from oven and spoon enough of the cream of mushroom soup over the top to cover. Add a slice of cheese on top of that and top that with a slice of bacon cut in two.

Broil until the bacon is cooked through. (if the bacon is thick you may want to microwave a few seconds or fry up in the pan first)

This was a typical Saturday afternoon lunch at our house in N. Ontario during the winter months.
