Dear Abby’s Authentic Scotch Shortbread Cookies

3-1/2 cups flour
1/2 cup rice flour
1 cup sugar
1/3 cup firmly packed brown sugar
1/4 teaspoon salt
2 cups butter, softened (4 cubes)

Heat oven to 350ºF.

In large bowl, combine all dry ingredients until well blended. Add butter and knead until mixture begins to stick together. Remove dough to floured surface and knead until smooth and not sticky. Divide dough into 4 balls the size of softballs; chill.

Roll dough on floured surface to 1/4-inch thickness. Cut with cookie cutter; transfer to ungreased cookie sheet.

Bake at 350ºF for 20 minutes or until lightly browned.
