Dear Abby’s Broccoli Souffle
2 (10 oz.) pkgs. frozen, chopped broccoli, cooked per package directions
1 can (10-3/4 oz) condensed cream of mushroom soup
6 eggs, beaten
1 cup mayonnaise (not Miracle Whip)
1 tablesppon minced onion
Salt & pepper to taste
1/2 cup grated sharp cheddar cheese, if desired
Heat oven to 375º F.
Grease a 2-quart casserole with butter or margarine.
In large bowl, combine broccoli, mushroom soup, eggs, mayonnaise, onions, salt & pepper, and beat well.
Stir cheddar cheese into broccoli mixture, if desired. Pour broccoli mixture into prepared casserole dish. Place casserole in pan of water one inch deep. Bake about 70 minutes or until knife comes out clean when inserted in center. Serve hot.
