Dear Abby’s Chicken and Rice
1 cup Uncle Ben’s Converted rice, uncooked
1 chicken, cut into pieces or 2-1/3 lbs. chicken pieces
1 can (10-3/4 oz) condensed cream of mushroom soup
1 can (10-3/4 oz) chicken broth
1/2 pkg. onion soup mix (she prefers Lipton’s)
Sliced fresh mushrooms, if desired
Heat oven to 325ºF.
Wash chicken pieces and pat dry. Coat chicken with rice. Place chicken, skin-side-up, in 9 x 13-inch baking dish. In large bowl, combine mushroom soup, chicken broth and onion soup mix; mix well. Pour soup mixture over chicken.
Cover and bake at 325ºF for 2 hours. Uncovere; add mushrooms, if desired, and bake an additional 30 minutes to brown.
Serves: 4.
TIP: Recipe may be doubled.
