Dear Abby’s Fabulous Potato Chip Cookies

1/3 cup finely crushed potato chips
1/4 cup chopped nuts
3/4 cup sugar
3/4 cup butter or margarine, softened
1 egg yolk
1 teaspoon vanilla
1 1/2 cups sifted flour
1/2 cup sugar (set aside)

Heat oven to 375 degrees F.
In large bowl, beat sugar, butter, egg yolk and vanilla until light and fluffy.
Lightly spoon flour into cup; level off.
Add flour to sugar mixture; mix well.
Stir in potato chips and nuts.
Roll dough into 1-inch balls.
Place 3-inches apart on ungreased cookie sheets.
Dip bottom of 3-inch wide glass in remaining sugar.
Flatten balls with glass bottom. Be sure to coat glass bottom with sugar before flattening each cookie.
Bake at 375 degrees F for 12 to 15 minutes or until golden brown.
Cool slightly. Remove from cookie sheets.

Yield: 3 dozen cookies.
